i made this cake for a friends little girl last week. i know it's not a cupcake, but i still decided to post it :).

i used a heart shaped pan to bake the cake layers. i cut the tip off the heart shaped cake pieces to make the cake look like a lily pad. i covered the cake with light green fondant and brushed on some edible shimmer dust to add a nice glittery princess shine. the flowers are fondant and frosting. my friend bought the characters at the disney store.

i made this guitar cupcake cake for my bro in law's 19th bday. he loves playing the guitar...so this is what i came up with. i was looking through my house for something that would work as guitar strings, and found these retro candy dots..they were perfect! i then found some yellow spree's & put them on for more added fun. the lightning bolts are even edible {i used a lightning bolt cookie cutter and chocolate candy melts}. if you look close the ribbon says "rock king" {i got it at michaels last year along with the silver "rocker" letters}.

i made these cupcakes a few weeks ago for a little guy who loves transformers, the color blue, and the color green :). i made the transformer pops out of white chocolate candy melts dyed yellow {and soap molds}. the letters are chocolate too! i used some adorable letter molds.

i made these cupcakes for my friends little boy, kai. he had a water/pool themed birthday party.
i made the shark fins out of card stock.
and as for the cupcakes..they were pretty yummy! pina colada!

here's the cupcake recipe...

ingredients:
1 package yellow cake mix
1 package instant vanilla pudding and pie filling mix
3/4 cup Coco Lopez Cream of Coconut
1/2 cup white grape juice {or rum, if you drink alcohol}
1/3 cup vegetable oil
4 eggs
1 can crushed pineapple, well drained
1/2 cup shredded coconut

preparation:
preheat oven to 350°. in a large mixing bowl, combine cake mix, pudding mix, 3/4 cup cream of coconut, 1/2 cup white grape juice, oil, and eggs. beat on medium speed 2 minutes. Stir in drained crushed pineapple & shredded coconut. divide into cupcake liners. cook for 15-18 minutes.

i made these cupcakes for my niece's birthday party. we dipped the tops of the cupcakes in a chocolate glaze {my niece helped} and then added strawberry slices to finish them off. the glaze is really easy to make...

CHOCOLATE GLAZE FROSTING {dries smooth, hard, and shiny}

6 tablespoons cocoa
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla

1-Melt your butter.
2-Add all other ingredients.
3-Stir until well mixed and smooth.
4-Add more water if you want it thinner at this point.
5-If using as icing and you think it's too thick just let it sit for a few minutes.

i made these cupcakes last weekend for a benefit bake sale. they were chocolate cupcakes with banana cream frosting! i came up with the frosting on my own, although i know there's a lot of banana cream frosting recipe's out there.
here's my recipe:

BANANA CREAM FROSTING
1/2 cup butter {1 stick}, softened
1 8 oz package of cream cheese, softened
1 tsp vanilla
4 cups powdered sugar
1 small package of banana pudding mix

beat the butter, cream cheese, & vanilla together. add the powdered sugar and banana pudding mix and beat until well blended.

i made these cupcakes a few weeks ago for my brother in law's birthday. we can all be a kid at heart, right? :)

i made the saws and hammers out of candy melts {and a soap mold}. the frosting was my own creation....mint chocolate {i put brown sprinkles on top}. it was yum!
here's the recipe:

MINT CHOCOLATE FROSTING
1/2 c {1 stick) butter, softened
2-3 cups powdered sugar {depends on how thick you want the frosting}
1/3 cup cocoa powder
2 tsp mint extract {or add more until you get the desired flavor, it also depends on how strong your mint extract is}

the toppers are supposed to be the cat's HAT'S. i made them out of white chocolate covered oreo's {i used wilton's candy melts and a cookie mold}, cherry life savers, and mint savers {stuck together with white frosting}. i made the actual cat in the hat toppers out of magnets.

i made these cupcakes for a boy in our neighborhood who's birthday fell on the day we had scout pack meeting. i made the scout badge cupcake toppers in photo shop {thank you google images}.

it turned out that the birthday boy's family took him camping, so he wasn't able to make it :). oh well, everyone enjoyed the cupcakes just the same. happy birthday isaiah!

key lime definitely isn't green eggs or ham, but they were still green, and that's what i wanted :).

here's the yummy recipe...

KEY LIME CUPCAKES
1 cup all purpose flour
3/4 cup self-rising flour
1/2 cup (1 stick) unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
1/4 teaspoon neon-green food coloring
3/4 cup buttermilk

FROSTING
1 8-ounce package cream cheese, room temperature
1 1/2 cups powdered sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon finely grated lime peel
1/2 teaspoon vanilla extract

Preparation

CUPCAKES

Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

FROSTING
Beat all ingredients in medium bowl until smooth. Spread or pipe onto cupcakes.

here's the YUMMY recipe {adapted from howtoeatacupcake.net}

raspberry lemonade cupcakes
makes 12

1/2 cup (1 stick) unsalted butter, at room temp
3/4 cup sugar
3 large eggs, at room temp
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 packets Crystal Light® On The Go Raspberry Lemonade mix
zest of one lemon
Frosting4 oz. Neufchâtel cheese (or cream cheese), at room temp
1/2 cup (1 stick) unsalted butter, at room temp
1 1/2 cups confectioners' sugar
2 teaspoons water
1 packet Crystal Light® On The Go Raspberry Lemonade mix

1. Preheat oven to 350 F. Line a 12-cup muffin pan with paper liners.
2. In a small bowl, whisk or sift together flour, baking powder, and salt.
3. In a large bowl, beat butter, sugar, and lemon zest with an electric mixer on high speed for 2 minutes.
4. Add eggs one at a time, beating on high speed for 30 seconds between each addition. Scrape sides of the bowl occasionally with a rubber spatula.
5. In a measuring cup, combine milk and lemonade. Mix well.
6. Add flour mixture alternately with milk mixture, beginning and ending with the flour. (You should have 3 additions of flour and 2 additions of milk.) Mix just until flour is incorporated.
7. Divide batter among muffin cups. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean (a few crumbs are fine). Cool on a wire rack. When cupcakes are completely cool, make the frosting.
8. In a large bowl, beat cream cheese and butter with an electric mixer on high speed for 20 seconds. Slowly add confectioners' sugar 1/2 cup at a time, beating on medium speed until combined.
9. In a small measuring cup, mix water and lemonade until completely dissolved. Add lemonade mixture to the large bowl. Beat on high speed until frosting is thick and creamy.

i made these cupcakes with a white cake recipe and a cheesecake pudding mix. they were yum! i frosted them with homemade butter cream frosting and added red, white, & blue nonpareils. you can't forget the adorable toppers and cupcake sleeves i put together via paper and cake {they sell darling printables}. happy 4th of july!!!

i made these cute cotton candy cupcakes for a sugar & spice party i hosted a few weeks ago {to see more pics of the party and my candy buffet go to my party site, here}. they were really yummy, and tasted a lot like cotton candy!

how to:

first i added 1 1/2 containers of blueberry yogurt to my white cake batter...

then added a little cotton candy flavoring {you can also add actual cotton candy to the batter, i just didn't have any on hand}...

the frosting was cream cheese with cotton candy flavoring {and blue food coloring gel}.

after all was said and done i rolled the edges in clear candy sprinkles & added a cotton candy topper {found on ebay}.

superman pancake cupcakes!

for fathers day this year we had a 'superdad' day. i made some raspberry muffins and pancake cupcakes for breakfast for my hubby. i had these adorable cupcake toppers that i had to use..but since everything was a surprise in the morning i didn't want to make cupcakes for breakfast! i got the idea from my friend, Lyndsey {kitchendoughdough}. so fun, huh?!
i put whipped cream on top...and added melted butter and syrup when eating 'em. delicious pancakes! my kids loved them, too! yum~

my sister in law has a collection of 'juicy couture' handbags & loves the brand, 'juicy' so i decided to try and come up with some juicy couture cupcakes for her birthday!

i made some jumbo peanut butter chocolate cupcakes to begin with {they were yum!}...

then piped on some raspberry cream frosting i made with a jumbo #1c tip {the frosting tasted EXACTLY like cream savers!}...

and as for the cupcake toppers:

i found some wooden shapes at the craft store {crowns, hearts, royalty symbols} that worked perfectly! i got so excited when i found them! i revised them a bit and then matched the colors in photoshop and made some 'juicy couture' logos {gotta love google images}...which i printed, cut, and glued onto the crowns etc. i then painted some regular kitchen skewers and glued them to the backs of the shapes...and walla!

elmo cupcakes

my son turned two today! and although we're having a big circus birthday party for him & his brother {they're both june babies} in a few weeks, we celebrated today as well. he loves elmo...so i decided to make him some elmo cupcakes! i've seen a lot of different ideas floating around the web for elmo cakes/cupcakes etc. here's my own version of them.

how i made them:

i piped red frosting on using a grass tip to make the red elmo fur
used oreo cookies for the mouths
used orange gumballs for the noses
and used white candy melts for the eyes

my little guy LOVED them! these would be perfect for any elmo/sesame street themed party!

Chocolate Peanut Butter Cupcakes

I hosted a Cupcake Tea Party with my friend Lyndsey this weekend. I made these Chocolate Sour Cream Cupcakes with Peanut Butter Cream Cheese Frosting for the event! They were sooooo yummy! And now here's the recipe's {adapted from smittenkitchen.com}....

Chocolate Sour Cream Cake

2 cups all-purpose flour

2 1/2 cups sugar

3/4 cup unsweetened cocoa powder, preferably Dutch process

2 teaspoons baking soda

1 teaspoon salt

1 cup neutral vegetable oil, such as canola, soybean or vegetable blend

1 cup sour cream

1 1/2 cups water

2 tablespoons distilled white vinegar

1 teaspoon vanilla extract

2 eggs

1. Preheat the oven to 350 degrees F. Fill your cupcake pans with cupcake liners.

2. Sift the flour, sugar, cocoa powder, baking soda, and salt into a large bowl. Whisk to combine them well. Add the oil and sour cream and whisk to blend. Gradually beat in the water. Blend in the vinegar and vanilla. Whisk in the eggs and beat until well blended. Scrape down the sides of the bowl and be sure the batter is well mixed.

3. Bake for 17 to 20 minutes, or until a cake tester or wooden toothpick inserted in the center comes out almost clean. Let cool for about 20 minutes.

Peanut Butter Cream Cheese Frosting

10 ounces cream cheese, at room temperature

1 stick (4 ounces) unsalted butter, at room temperature

5 cups confectioners’ sugar, sifted

2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)

1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy.

Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.

2. Add the peanut butter and beat until thoroughly blended.

I made these fun cupcake suckers the other day for our cupcake tea party this week! I found the molds on ebay. They were really fun and pretty easy to make! Just get candy melts in various colors...then melt and mold in layers :). Fun stuff.

I made these cute little cupcake earrings today for my upcoming cupcake tea party. Aren't they adorable?! My friend sent me a link to a tutorial on how to make them...they're from saucy's sprinkles.

Here's my tutorial...

Supplies you will need:

Polymer clay (at least 2 different colors)

Beads

Eye pins

Jump rings

Earring piecesTake the brown (or color you are using for the cupcake bottom) clay and roll it into a thick snake. Then cut the snake into small pieces...Use a knife or wire to make marks around the sides of the small shape (cuppy bottom)...Then take your other piece of clay and roll it out into a thin snake (this is for the frosting part of the cuppy)...Take the clay snake and attach it to the cupcake bottom. Then start swirling it around the top in a circular motion until it's as tall as you would like. Pinch the clay off at the tip...And here they are ready to go in the oven (just follow the packaging instructions as far as baking goes). I added small beads for sprinkles and inserted the connector throught the top...And the final result! Here they are after they're all baked with earring hooks added (I also sprayed them with a clear varnish)...

snow cone cupcakes!

Yes folks, these are actual cupcakes..not snow cones made out of ice!

So I'm planning a big circus birthday party....and the other day I was thinking about snow cones. I thought they would be fun for the whole event but didn't know if I wanted to stand behind a snow cone machine making them throughout the whole party. I sat there thinking for a bit, and suddenly came up with the idea of 'snow cone cupcakes'!!! I don't know why I didn't think of them earlier! Just use snow cone papers as cupcake liners and there ya have it!

I made some tester ones tonight :). I want the final ones to be more rounded on top but here's my quick go at 'em. Cute, huh?!

I just filled the snow cone papers with batter..baked them (now that was the tricky part..but guess what, the snow cone holders you see above are metal...so I used them! I was originally going to use chicken wire over a deep pan, which I think would work as well)..and covered the tops with frosting and bright colored sprinkles! I'm so excited about them! I've never seen anything like them. I'm patting myself on the back right now..hehe.

Red Creme Soda Cupcakes for the Iron Cupcake: Earth April Challenge

I have been so excited to create these cupcakes since I first heard the Iron Cupcake: Earth cupcake challenge was soda pop! (They challenge bakers each month with a new ingredient. Check out their site at http://www.ironcupcakeearth.com/)To decorate the cupcake, I put Barq's Red Creme Soda in the bottom of a glass, adding cherries if you like for added decor. I dropped the cupcake in the mug, letting the creme soda soak the very bottom of the cupcake. Next, I piped the frosting to look like ice cream using a 1A decorating tip. Finally, I wolfed it down with a fork! I LOVE anything cherry. I also added a straw so I could sip some of the red creme soda from the bottom. It's my favorite soda pop, after all, which is where I got the inspiration for my cupcakes. In our house, we love to make red creme soda floats, hence the decorating idea.

Red Creme Soda Cupcakes

1 white cake mix (or a white cake from scratch and skip the water, oil and whole eggs)

1 c water

1/3 c oil

3 whole eggs

1/4 c Barq's Red Creme Soda

1 T Stasero cherry syrup

Preheat oven to 350. Prepare cupcake (muffin) pans by spraying cooking spray (I use Baker's Joy) or lining with baking liners. Stir cake mix, water, oil, and eggs until moistened. Add red creme soda and cherry syrup. Beat with a mixer on low speed for 2 minutes. Fill each part of the cupcake pan/liners 2/3 full. Bake about 16 minutes or until toothpick inserted in center comes out with just a few crumbs attached to it. This time is for 12 cupcakes.

Red Creme Soda Frosting - Adapted from America's Test Kitchen

2 tablespoons whipping cream

1 teaspoon vanilla extract

Pinch salt

2 1/2 sticks unsalted butter, softened

2 1/2 cups confectioners' sugar

1 T Stasero cherry syrup

1 T Barq's Red Creme

15 maraschino cherries (you could just do 2/3 cup)

Stir the cream, vanilla, and salt together in a small bowl. Beat the butter on med-high speed until smooth. Reduce speed to med-low. Add the confectioners' sugar slowly and beat until smooth, about 2-3 minutes.

Beat in the cream mixture. Add cherry syrup, red creme soda, and cherries. Beat on high to puree the cherries. Beat until mixture is light and fluffy, about 3-5 minutes.

these were super fun to make. for the flowers i cut rainbow licorice into little pieces (let the licorice sit out for a bit so it harden's..it makes it a lot easier to cut and will also hold it's shape better) and stuck them onto some wire i bought at the hardware store (cut into 3-4 inch lengths). i then used jellybeans for the eggs, and green frosting for the grass (piped on of course). so fun, huh?!

i made these cupcakes for a movie night/girls night out i had. i made the cupcake containers out of striped popcorn bags (folded and cut to size)...and added the cut out popcorn logo on the front of 'em. i baked the cupcakes in regular liners and then stuck them in the little boxes after they cooled. the 'popcorn' on top is marshmallows (i used kitchen scissors to make x marks on them) sprayed with yellow food coloring spray. they turned out so cute!

i made these baby penguin cupcakes for my sister in law's shower last saturday. she's having a girl (hence the pink frosting). the penguin's are made out of keebler cookies, tic tac's, and bubble tape cut into triangles :). i stuck heart shape pics into them to match the shower theme.

i made these cupcakes last summer for my little boy's car themed birthday party. they were a huge hit..& lots of fun to make. i made the black frosting really runny to try and imitate 'tar' (which worked out great...it started dripping down the sides of the cupcakes & really completed the 'tar' look). i cut orange licorice for the road stripes, and got marshmallow cars and road sign suckers for the cupcake toppers.

i'm sure many of you have seen these before, they're just too darn cute to pass up though! yup, the cones i made aren't actually 'ice cream cones' they're 'cupcake cones'. and for toppings-coconut frosting with chocolate or strawberry syrup and rainbow nonpareils. kids love these bad boys!

mini caramel apples

i know these aren't cupcakes but i thought i'd post them anyway cuz they're so adorable! i used a melon baller & made mini caramel apples for our party last night. i dipped them in caramel & chocolate & used andes mint pieces, heath bar bits, mini reeses, & mini m&m's for toppings :). so cute, huh?

i made these with fondant (that i dyed pink), green frosting, & yellow nonpareils :). fondant definitely doesn't taste the best, but i just love the look of it..all smoothe! i do have a recipe for a marshmellow fondant that's suppose to taste good..i need to try it!

princess cupcakes

my friend jamie asked for some ideas for princess cupcakes. i've been thinking about what would be cute ever since i read your comment this morning jamie :). i came up with this cupcake while my boys were napping today. it was really fun :). i cut two stars from some scrapbook paper...hot glued a sucker stick & some wrapping paper ribbon inbetween the two to make a princess wand...then cut a large circle out of pink tissue paper and hot glued it to the cupcake wrapper to add some spice :). i had some princess ribbon lying around (i have tons of ribbon bc i used to make things & sell 'em on ebay) that i glued to the outside of the base. oh, and the cupcake is just regular chocolate with strawberry frosting and fun pink sprinkles :). man, i need a little girl or something :).

these apple cupcakes were super easy and too cute! i covered the cupcake in vanilla frosting, rolled the top in green sprinkles, inserted a pretzel stick & mint leaves, & then used a child's fork to take a 'bite' out of it & added three brown sprinkles for apple seeds (i wanted to use sesame seeds but only had the light colored ones). aren't they adorable?!

i had a lot of fun making these this morning. the spider one's are pretty self explanatory..frosting & leaf sprinkles with added legs to make them look like spiders :). for the mummies i used wilton's tip #104. and the last ones are made out of coconut & sprinkles..i made the pumpkins out of circus peanuts, they're cut and folded in half and molded together :).

I decided to start a cupcake blog for all my cupcake creations. As many of you know, I LOVE cupcakes :). I don't know what it is exactly that draws me to any cupcake recipe, or ANYTHING cupcake for that matter..i just can't help myself. maybe it's because they're so small and cute..maybe it's because the icing and sprinkles on them just jump out at me..i don't know...i'm just so in love with them! so here goes nothing..i'm going to test my skills and work on some much needed improvements!
