princess and the frog cake
i made this cake for a friends little girl last week. i know it's not a cupcake, but i still decided to post it :).i used a heart shaped pan to bake the cake layers. i cut the tip off the heart shaped cake pieces to make the cake look like a lily pad. i covered the cake with light green fondant and brushed on some edible shimmer dust to add a nice glittery princess shine. the flowers are fondant and frosting. my friend bought the characters at the disney store.

guitar cupcakes / guitar cupcake cake
i made this guitar cupcake cake for my bro in law's 19th bday. he loves playing the guitar...so this is what i came up with. i was looking through my house for something that would work as guitar strings, and found these retro candy dots..they were perfect! i then found some yellow spree's & put them on for more added fun. the lightning bolts are even edible {i used a lightning bolt cookie cutter and chocolate candy melts}. if you look close the ribbon says "rock king" {i got it at michaels last year along with the silver "rocker" letters}.

pink flag cupcakes
i made these cupcakes for my sister's birthday. i think they turned out pretty cute. the flags were so easy to make. i just cut up little pieces of scrapbook paper and attached them to toothpicks. fun and PINK!

shark cupcakes
i made the shark fins out of card stock.
and as for the cupcakes..they were pretty yummy! pina colada!
here's the cupcake recipe...
ingredients:
1 package yellow cake mix
1 package instant vanilla pudding and pie filling mix
3/4 cup Coco Lopez Cream of Coconut
1/2 cup white grape juice {or rum, if you drink alcohol}
1/3 cup vegetable oil
4 eggs
1 can crushed pineapple, well drained
1/2 cup shredded coconut
preparation:
preheat oven to 350°. in a large mixing bowl, combine cake mix, pudding mix, 3/4 cup cream of coconut, 1/2 cup white grape juice, oil, and eggs. beat on medium speed 2 minutes. Stir in drained crushed pineapple & shredded coconut. divide into cupcake liners. cook for 15-18 minutes.

chocolate glaze cupcakes
CHOCOLATE GLAZE FROSTING {dries smooth, hard, and shiny}
6 tablespoons cocoa
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla
1-Melt your butter.
2-Add all other ingredients.
3-Stir until well mixed and smooth.
4-Add more water if you want it thinner at this point.
5-If using as icing and you think it's too thick just let it sit for a few minutes.

chocolate banana cream daisy cupcakes
here's my recipe:
BANANA CREAM FROSTING
1/2 cup butter {1 stick}, softened
1 8 oz package of cream cheese, softened
1 tsp vanilla
4 cups powdered sugar
1 small package of banana pudding mix
beat the butter, cream cheese, & vanilla together. add the powdered sugar and banana pudding mix and beat until well blended.

i made the saws and hammers out of candy melts {and a soap mold}. the frosting was my own creation....mint chocolate {i put brown sprinkles on top}. it was yum!
here's the recipe:
MINT CHOCOLATE FROSTING
1/2 c {1 stick) butter, softened
2-3 cups powdered sugar {depends on how thick you want the frosting}
1/3 cup cocoa powder
2 tsp mint extract {or add more until you get the desired flavor, it also depends on how strong your mint extract is}
mix well :)

cat in the hat cupcakes
here's the final dr seuss cupcakes i made for my friends baby shower a few weeks ago. to see more of the fun shower go here.the toppers are supposed to be the cat's HAT'S. i made them out of white chocolate covered oreo's {i used wilton's candy melts and a cookie mold}, cherry life savers, and mint savers {stuck together with white frosting}. i made the actual cat in the hat toppers out of magnets.

here's the second batch of cupcakes i made for the dr. seuss shower {to see all pics of the fun shower go here}. i made the toppers out of magnets!key lime definitely isn't green eggs or ham, but they were still green, and that's what i wanted :).
here's the yummy recipe...
KEY LIME CUPCAKES
1 cup all purpose flour
3/4 cup self-rising flour
1/2 cup (1 stick) unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
1/4 teaspoon neon-green food coloring
3/4 cup buttermilk

Preparation
CUPCAKES
Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.
